Try Rhubarb

Rhubarb is a plant with a thick pink stem and huge green leaves. We usually think of rhubarb being combined with strawberries in a pie. This is a tasty dessert, but you can enjoy a healthier version by cooking one-half inch chunks of rhubarb with a little water and just enough sugar or no calorie Splenda to sweeten the rhubarb.

Add some cinnamon and cook over low heat until it is mushy. Serve one-half cup of the mixture in a dessert dish and top with a little whipped cream and a sprinkling of walnuts or almonds. Rhubarb is a great source of lutein, potassium, calcium, and magnesium, plus a half a cup of this dessert has around two grams of fiber.
