Garlic Chive Mashed Potatoes

These garlic chive mashed potatoes are super low in calories and decadent in flavor. Dish up an extra big helping – guilt free.

Prep Time: 05 minutes
Cook Time: 1 hour, 00 minute
Ingredients:
  • 6 baking potatoes
  • 2 cups 1% milk
  • 2/3 cup nonfat sour cream
  • I tsp salt
  • I tsp garlic powder
  • 3 Tbsp freshly minced chives
Preparation:
  1. Preheat oven to 425°F. Bake potatoes until soft, about 1 hour, and remove from oven.
  2. Scoop out potato flesh and mash it.
  3. Add milk, sour cream, salt, garlic, and black pepper to taste. Mix well; top with chives.
Makes 8 servings
