Ingredients:
- 1 cup all-purpose flour
- 1 cup quick-cooking oats
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
- 1 tsp baking soda
- 6 Tbsp butter
- 6 Tbsp canola oil
- 3/4 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup dried apricots, diced
Preparation:
- Preheat oven to 375°F. Spray a 9x13 baking pan with nonstick spray.
- Combine flour, oats, salt, spices, and baking soda in a medium bowl.
- In a large bowl, beat butter with oil and sugars. Add eggs and vanilla extract and beat again until creamy. Slowly mix in dry ingredients until thoroughly combined. Fold in apricots.
- Spread mixture evenly in pan. Bake for 20 to 25 minutes. Cool completely, and then cut into bars.
