Rosemary Extracts for Grilling Burgers

Some people avoid grilled foods because that type of high-heat cooking can cause the formation of heterocyclic amines that have been known to cause cancer. Recently a researcher found adding rosemary extract to hamburger reduced the formation of the heterocyclic amines. The effect of the rosemary may be due to the combination of antioxidants naturally found in the plants.

Rosemary extract can be added to the surface of meats, or included is an ingredient in a marinade to be used before grilling.

This is the first I’ve heard about grilling and cancer. What effect does it have, i.e. 0.01% extra risk, or 25% extra risk, etc.? Is thi shwy BK have stopped running their ‘flame grilled’ adverts?
