I Love Potatoes!

potatoesI have to admit I am probably a bit biased because I basically grew up on a potato farm, but I think potatoes are delicious and nutritious, as long as you don't turn them into french fries or potato chips.

When I was a kid I would dig baby potatoes out of one my grandpa's fields, rinse them off and eat them raw. I think potatoes in one form or another were a part of just about every meal we ate.

When the low-carb diets became popular, potatoes became some kind of dietary villain. What a shame. In fact, a reader once asked me if potatoes are good for you or bad for you. You can probably guess what I said, but you can read more about potatoes in my answer.

I have tried raw potatoes a couple of times and did not care for it. Maybe this is something that must grow on you over time. I do believe that there must be nutritional benefits to eating potatoes in their uncooked form.
